Best dinner ever

Tonight's dinner was so delicious!! I mean, it's true, I've never had anything out of a Moosewood cookbook that wasn't really good, but this is definitely one of the best things -

avocado & grapefruit salad (with garlic, olive oil, spinach)

black bean chilaquile casserole, MM...contrary to how cheesy this looks, it's actually really low-fat and it was so good. I used my 60s casserole dish! It's all iridescent on the outside and perfectly sized for four portions (two meals for us).

Breakfast

When it's 90+ degrees everyday, I am too hot to find food even remotely appetizing. It's really bad, because it just makes the effects of the heat worse. This morning I decided to eat an actual breakfast instead of pickles or cheese (yes, actual "breakfasts" I have eaten recently). Luckily, it wasn't hot yet, so turning on the oven wasn't horrible.

Poached egg and roasted asparagus!

It was really good. I'm proud of myself for actually knowing how to poach an egg...for some reason, it seems really fancy, even though it's not at all difficult. If only I could figure out how to do a souffle without it falling...

Bread!

Yesterday I baked my first-ever loaf of bread...it's pretty tasty! After reading online, I think the only problem with it is that I didn't knead it for long enough...it came out a little bit dense. I guess practice makes perfect? The bread is really good with a chunk of swiss cheese and some jam on top.

Tomorrow I'll get back to updating! I've been on vacation and not accomplishing much of anything.

Actually made a fairly delicious and healthy dinner last night!

chickpea & tofu curry, cucumber & yogurt salad

I obviously don't have a future as a food photographer...you'll just have to take my word that it was yummy.

It's been a while

Oops! It's been a month since I last posted. I went to visit my parents and got out of touch with the internet and so on. I'm working on a lot of stuff with Matt (we got a wholesale account with Alternative Apparel and pretty soon we'll hopefully have printed & dyed stuff up on our Etsy). Today is rainy and grey and I'm off to mail some things, but before I go, my delicious 10-minute lunch:

I used shiro miso (any kind of miso is fine), dashi, ramen, veggies (I used mushrooms, carrots, and spring onions)

Boil two cups water in a small pot, add 2 tbsp miso and 1/2 tsp dashi until dissolved, add veggies and ramen and cook for 4-5 minutes depending on how chewy you like your noodles

done! I could eat this every day.

Now it's post office time and then maybe a museum. I can't decide if I want to go back to the Brooklyn Museum (I was just there a few days ago) since I have a membership or to the Met or Natural History Museum because I haven't been there in forever.

dinner

A few days ago, I actually went to the grocery store for the first time in forever and looked pretty damn pathetic since I had to stop to readjust all the bags on my trek uphill back to the apartment. But they were heavy! Anyway, this is one of the meals I made with the food I bought -

Southwestern Potato Salad & Calabacitas Burritos (both recipes from Moosewood Celebrates)

The potato salad called for regular potatoes but I like red ones a lot better...the dressing had olive oil, cider vinegar, cumin, coriander, paprika, cilantro, lemon juice and Dijon mustard in it. Overall, it just tasted very vinegar-y. I'd probably add more spices next time and maybe replace the paprika with red pepper (paprika has practically no flavor to me).

Mmmm...this was just onions, garlic, zucchini, frozen corn, and black beans sauteed with cilantro, lime juice, and jalapenos. It was soo good just in the tortillas but Matt and I decided it would be even better on top of grilled tuna.

Anyway, I felt pretty good about actually cooking dinner for once (and a healthy dinner, at that!) The night before last I made spinach & ricotta stuffed manicotti and they were really good, too. Everyone should buy that Moosewood cookbook, I've never had a single bad thing out of it and I've probably made at least 30 of the recipes!

My computer died :(

Of course, right after I got the idea to update every day on what I did, my computer completely crashed. So I'm on Matt's now, and this is what I've done for the past two or three days:

Put up these awesome cards in the office that we found at the thrift store.

Testing my new markers!

Made "Pesto Potato and Sundried Tomato" layered slow cooker dish...the pictures I took of the actual food looked disgusting so this will have to do!
